You can slow thaw in the refrigerator overnight. Or quick thaw in a bowl of cold water, changing the water every 20-30 minutes until thawed.

Lamb leg slices are great for grilling or cast iron cooking, just like a bone-in ribeye. Throw in some rosemary and thyme, and aim for medium rare to medium doneness.
