Our herds are 80% Jersey and 20% Jersey crosses (Jersey/Guernsey, Jersey/Brown Swiss, Jersey/Holstein, etc).
How long is the beef aged?
Our beef is dry aged (or hung) for 10 days.
Isn't the tongue tough since it's a constantly used muscle in the cow?
Yes, beef tongue is a tough piece of meat, but if you cook it low and slow, it gets super tender.
How do I cook it?
Pork tongue can be pickled, smoked, grilled or braised.
