Grass-Fed Beef

Our cows spend almost all of their time at pasture, eating fresh grass when in season.

Pasture Raised *All of our animals are outside on fresh, biodiverse pasture as much as the weather allows. They have plenty of room to roam and forage. In the colder months, our dairy cows, buffalo, goats, and laying hens spend more time in s barn. The pasture isn't growing, and we don't want them to muddy up the pastures (as animals tend to do).
100% Grass Fed & Finished *When we say 100% grass fed, we mean it. Our ruminant animals (cows, buffalo, sheep) are fed 100% grass, fresh from the pasture in the warmer months and dry pasture (AKA hay) in the colder months. No grain - ever.
Washed in Organic Apple Cider Vinegar *The USDA requires that the outside of beef and pork carcasses are sprayed with an antimicrobial agent during the hanging and aging process. This is to prevent the spread of potentially harmful pathogens. A grand majority of processors use harsh chemicals like chlorine or citric/lactic acids. Instead, we partner with a processor that uses organic apple cider vinegar. We do this to produce the most natural food possible, reducing the amount of toxins for everyone and everything.
Aged for 2-3 Weeks *Beef is aged 2-3 weeks to naturally improve its tenderness and flavor. During this time, enzymes in the meat break down muscle fibers, making it more tender. The aging process also allows moisture to evaporate, which concentrates the beef's natural flavors and develops deeper, more complex taste notes. This timeframe strikes a balance, long enough to see meaningful improvements in quality... but not so long that it becomes impractical or overly expensive.
No Chemicals, Drugs, or GMOs  *Our farmers do things naturally. They don't use chemical fertilizers. Animals don't receive antibiotics, hormones, steroids, vaccines, or anything like that. And everything is GMO free. The only exception is that, when a farmer buys new large animals like pork, beef, and dairy cows, they may have received a vaccine before they got them.
Frozen When Very Fresh *Packed in vacuum sealed packs. The is the best way for a small farm to consistently supply you with meat and have zero food waste.
