<div class="answers">Kidneys can be tough and thus require a long cooking time. They also must be cleaned before cooking (they've got sort of a funky smell to them).<br><br>
<ul>
<li>Begin by removing as much of the fat and sinew (fibrous tissue) from the kidney as possible.</li>
<li>Soak kidneys in milk for at least 2 hours (or overnight) to help remove impurities, smells, and soften the meat.</li>
<li>Bring a pot of water up to boil with the soaked kidneys in it. Cook them for about 30 seconds. They should be gray in color on the outside but not fully cooked. This step is to get rid of the blood scums in your cooking. Do not overcook them or they will turn tough.</li>
<li>Cube the kidneys and cook as desired.</li>

As the seasons allow, our cows are raised in the open pasture or field. They are 100% grass-fed and finished, which means they only eat their natural diet of grasses and what they forage on pasture. In the colder months, they have hay and free choice organic nutrients in the barn.<br><br>
Our cows are NEVER supplemented with grain feed. Our goal is to raise the healthiest and happiest animals possible!

<strong>What breed are your cows?</strong><br>
Our beef cows are Black Angus.<br><br>
<strong>How long is the beef aged?</strong><br>
Our beef is dry aged (or hung) for about 10 days. But… the organs are harvested immediately, so they’re not aged at all!<br><br>
<strong>Why do cow kidneys have a funky smell to them?</strong><br>
Kidneys are like the cow’s own personal Brita filter! They clean out all the junk from the blood, but that means they can get a bit stinky from stuff like urea and uric acid.

<strong>If kidneys are the animal's filter, should I be worried about impurities?</strong><br>
Yes, this is definitely a concern with conventionally raised animals who are given routine drugs, fed grains sprayed with chemicals, etc. But since our cows are raised as naturally as possible, there's little worry about that yucky stuff.<br><br>
<strong>Do your cows get mRNA vaccines?</strong><br>
