Veggie Loaded Pork Meatballs

I am a huge fan of meatballs! When it comes to getting a lot of nourishing ingredients into my kiddos bodies meatballs are the way to go! These meatballs taste great warm or cold and freeze well too. I enjoy these topped onto salads or grain bowls and my kids eat them straight up dipped into Greek yogurt for a snack or mini meal.

Preparation

  • Preheat the oven to 350F. 
  • Lightly grease a baking sheet and set it aside. 
  • Combine all the ingredients together in a large bowl and mix well. 
  • Form the mixture into 2 Tablespoon size meatballs. 
  • Bake for 20 minutes or until cooked through. 
  • Serve meatballs with yogurt or your favorite condiment.
